ELABORATION
     
     
 
This process starts with picking the grapes by hand and storing them in boxes of 14kg of capacity.
When harvest time arrives at the winery, a vinification process is begun with the highest care and attention to detail is paid throughout,  controlled fermentation in stainless steel vats and barrels. Small volume vats are used in order to distribute the different groups of musts to make suitable coupages later on.
